What is Pizza? History of pizza. Type of Pizza.

Posted by: upstatepizza on: November 11, 2009

Pizza -  is a world-popular dish of Neapolitan origin, made with an oven-baked, flat, generally round bread that is often covered with tomatoes or a tomato-based sauce and cheese.  Other toppings are added according to region, culture, or personal preference.

Originating in Neapolitan cuisine, the dish has become popular in many different parts of the world. A shop or restaurant that primarily makes and sells pizzas is called a “pizzeria”. The phrases “pizza parlor”, “pizza place” and “pizza shop” are used in the United States. The term pizza pie is dialectal, and pie is used for simplicity in some contexts, such as among pizzeria staff.

History of pizza

The origin of the word “pizza” is unclear, but by 997 it had appeared in Medieval Latin, and in 16th century Naples a galette flatbread was referred to as a pizza. The pizza was a baker’s tool, a dough used to verify the temperature of the oven[citation needed]. A dish of the poor people, it was sold in the street and was not considered a kitchen recipe for a long time[citation needed]. Before the 17th century, the pizza was covered with white sauce[citation needed]. This was later replaced by oil, cheese, tomatoes or fish – in 1843, Alexandre Dumas, père described the diversity of pizza toppings. In June 1889, to honor the Queen consort of Italy, Margherita of Savoy, the Neapolitan chef Raffaele Esposito created the “Pizza Margherita”, a pizza garnished with tomatoes, mozzarella cheese and basil, to represent the colors of the Italian flag. He was the first to add cheese.[1] The sequence through which flavored flatbreads of the ancient and medieval Mediterranean became the dish popularized in the 20th century is not fully understood

Type of Pizza

New York Style pizza is a hand tossed pizza that has normal amounts of sauce and cheese, the cheese is flexible and is traditionally folded when eaten.

Greek pizza is served mainly in New England and was popularized by Greek immigrants in the USA. It uses olive oil, and is baked in a pan in a pizza oven. Typically, it has feta cheese and sliced olives on it.

Hawaiian pizza, despite not having been created in Hawaii, is a normal pizza with pineapple and ham as its toppings. This pizza is extremely popular in America, Australia and Sweden; and is gaining popularity in the rest of Europe.

Chicago Style pizza is a deep dish pizza which isn’t flexible and is baked in a deep pan making it good for stuffing with toppings under the cheese and/or marinara. This kind of pizza was said to be first made at Pizzeria Uno in 1843.

California Style pizza is a Thai pizza made with barbeque sauce, goat cheese, spinach or shaved carrots as toppings. The California Pizza Kitchen restaurant chain is popular for selling this dish.

White pizza is a pizza that uses no tomato sauce and usually uses something like sour cream. The pizza use usually referred as Pizza Bianca in Rome.

There are not too many nations that can say their national dish has become an international phenomenon. Italy has two such dishes, pasta and of course pizza. In America pizza usually falls into two categories: thick and cheesy Chicago style or thin and more traditional New York pizza. In Italy pizza also falls into two distinct categories: Italian pizza and the rest of the world. It might seem silly considering the basic ingredients, but one taste of a true Italian pizza and that’s it. You will never feel the same about this simple and delicious food again.
